Tomato corn rice
1 cup rice (uncooked)
3-4 tomatoes chopped
½ cup corns (frozen)
1 medium size onion roughly chopped
Salt to taste
½ tsp cumin seeds
2-3 dry red chillies
1 cinnamon stick
Few curry leaves
2 tbsp Kasuri meethi (dry fenugreek leaves)
1 tsp red chilly powder
½ tsp garam masala
¼ tsp black pepper powder
Chopped cilantro (coriander leaves)
Boil the rice and keep it aside to cool down.
Now in a separate pan add oil. Add cumin seeds, curry leaves and cinnamon stick. Saute it for few seconds and add onions.
Once the onion turns translucent pink add tomatoes. Cook till they are tender.
Now add red chilly powder, black pepper, garam masala and kasuri meethi. Mix it well.
Than add corns and salt. Add ½ cup of water and the boiled rice.
Mix them nicely. Sprinkle chopped cilantro and serve.
I love to have it with plain yogurt.
