Paneer do pyaza


200gms cottage cheese (paneer) cut into cubes or rectangles

3 medium size onions – 1 chopped and 2 cut into cubes
3 medium size Tomatoes – 1 chopped and 2 in puree
1-2 Green Chillies chopped
1 ½ tsp Ginger chopped or grated
2-3 Garlic cloves chopped
½ tsp Cumin Seeds
2 Green Cardamoms
2-3 cloves
2 dry red chillies (break each into two)
½ tsp Garam Masala
1 Bay Leaf
¼ teaspoon Turmeric Powder
½ tsp Red Chilli Powder
½ tsp Coriander Powder
½ tsp cumin powder
1 ½ tsp dry fenugreek leaves (methi)
½ tsp Sugar
Salt to taste
1 tablespoon Fresh Cream or ¼ cup full fat milk
Fresh cilantro to garnish


In a pan heat oil and shallow fry layers of onion until light brown. Take them out in a bowl.

Now in same pan heat 2 tbsp of oil. Add cumin seeds, cardamoms, cloves, dry red chillies and bay leaf. when they start sputtering, add chopped onion and saute until light brown.
Add ginger, garlic and green chilli, saute for a minute.
Now add chopped tomato and tomato puree.

Let it cook till tomato gets soft and all the water from tomatoes is evaporated.

Then add red chilly powder, turmeric powder, coriander powder, turmeric powder, cumin powder, fenu greek leaves, sugar and salt, mix well and cook till it leaves oil from sides.

Add paneer, shallow fried onions and around ¼ cup of water .Mix for a minute.
Add fresh cream or milk , mix it and cook it for another minute. Turn of the flame.

Sprinkle freshly chopped cilantro and paneer do pyaza is ready to serve with roti, chapati etc..
