Basically Navratan korma means "using of nine vegetables".
2 ½ cups diced vegetables( I used cauliflower, carrot, capsicum, broccoli, yellow bell pepper, potato, mushroom)
1 cup peas and corn (I used frozen)
100-150 gm cottage cheese(paneer) or tofu cut into 1 inch cubes
1 big onion chopped
2 tomato (puree form)
2-3 green chillies chopped
1 tbsp ginger paste
3-4 garlic cloves
1 tsp cumin seeds
1 tsp red chilli powder
1 tsp garam masala
½ tsp black pepper
¼ tsp turmeric powder
½ tsp cumin powder
1-2 black cardamom
2 bay leaves
1 inch cinnamon stick or ½ tsp cinnamon powder
1 tsp coriander seeds(crushed but not powder)
1 tsp fenugreek seeds (Meethi seeds)
½ cup cashewnut (grind them into fine paste using ½ cup milk)
1 cup milk(depends on consistency of your gravy)
2 tbsp desi ghee/oil/butter
Salt to taste
hand full of freshly chopped cilantro/ coriander/ dhaniya
½ cup of raisins(optional)
First of all in a microwave safe bowl add 1 tsp of oil and add all the veggies (cauliflower carrot, capsicum, broccoli,yellow bell pepper, potato).
Add 2-3 tbsp of water and microwave them for 5 minutes.
Now add peas, corns and mushrooms. Microwave them again for another 2 minutes. (You can do this on your flame as well, I prefer doing in microwave it reduces the cooking time and is quick)
Shallow fry the tofu or paneer. (You can use it directly also,But I like to shallow fry for this particular recipe)
Dip your raisins in warm water if you adding it to your recipe.
Now in a pan add ghee. Add cumin seeds, coriander seeds, fenugreek seeds, black cardamon ,cloves,bay leaves and cinnamon stick. Stir it for a minute. And add chopped onions to it.
Stir it till onion turns light brown and add ginger, garlic and green chillies.
Stir them for 2 minutes and add tomatoes. Mix it properly till tomatoes get cooked .
Now add all the powder masala's, salt and cook for a minute. Add little water else masala will start sticking.
Now add cashewnut paste and let it come to a boil.
Add 1 cup milk. keep stirring it continuously. Now add the microwaved vegetables and cook on medium low for about 2 minutes.
Add tofu,cilantro and raisins and cook for another 2 minutes.
Garnish with chopped cilantro and serve with roomali roti / naan/ chapati.
