Kadai paneer




Ingredients:

Cottage cheese (Paneer) 150 gms cut into cubes
1 big Capsicum – cut into cubes
3 Tomatoes - 1 chopped and 2 puree
1 Onion chopped finely
1tbsp ginger finely chopped or grated
1-2 green chillies chopped
1 tsp red chilly powder
¼ tsp turmeric powder
1 tsp garam masala
½ tsp cumin seeds
2 cardamoms (elachi)
2 cloves (long)
2 dry red chilly
½ tsp coriander seeds (dhaniya seeds)
½ tsp coriander powder
1 tsp kasoori methi
Fresh cilantro to garnish


Method:

In pan dry roast cumin seeds, cardamoms, cloves, dry red chillies and coriander seeds. Grind them along with tomatoes.

In a pan heat oil and stir fry capsicum for 2-3 minutes. Don't cook fully, it should remain crunchy. Take them out in a bowl .

Now in pan add oil and add chopped onion and saute until light brown.
Add ginger and green chillies, saute for a minute.
Now add chopped tomato and tomato puree.







Let it cook till tomato gets soft and all the water from tomatoes is evaporated.

Then add red chilly powder, coriander powder, turmeric powder, garam masala, fenugreek leaves and salt, mix well and cook till it leaves oil from sides. Add ¼ cup of water.

Add paneer and stir fried capsicum. Mix it properly and let it cook for another 2 minutes.
Turn of the flame.

Sprinkle freshly chopped cilantro and its ready to serve with roti, chapati etc..
