½ of cauliflower cut into florets
1 Onion chopped
1 tomato pureed form
2 Green chillies chopped
1 tbsp Ginger chopped
1 ½ tbsp Mustard oil filtered (you can use normal cooking oil as well)
½ tsp Mustard seeds
½ tsp Cumin seeds
½ Turmeric powder
Salt to taste
½ tsp red chilly powder
2 tbsp Yogurt
2 tbsp lemon juice
For dry roast
½ tsp mustard seeds
½ tsp teaspoon cumin seeds (jeera)
3 dry red chillies
½ tsp fenugreek seeds (methi)
½ tsp fennel seeds (saunf)
½ tsp nigella seeds (kalongi)
Dry roast the spices and then grind them to powder.
Now in a pan stir fry cauliflower in filtered oil till light golden brown and half cooked.
Take out the cauliflower and in same pan add oil. Add cumin seeds, mustard seeds, green chillies and ginger. Saute it for few seconds and add chopped onions. Cook them till onion turn light brown.
Now add tomato puree. Mix it for around 2 minutes and add the dry roasted masala's, turmeric powder, salt and red chilly powder.
Mix till it leaves oil. Now add cauliflower. Mix it well so the cauliflower gets coated with the masala nicely.
Now add yogurt. While adding yogurt make sure the flame is on low. Let it cook for another 5 minutes or till cauliflower is done. Add lemon juice and achari gobhi is ready to serve.
Serve it with phulka and dal. It tastes yummier.
