Tamarind( Imli) chutney
1 cup tamarind / Imli pulp(soak tamarind / imli in hot water, than take out the pulp separating the seeds)
1tsp cumin(jeera) seeds
1tsp white sesame seeds
salt to taste
¼ cup sugar or jaggery( I used jaggery)
½ tsp red chilly powder
¼ tsp black pepper
½ tsp coriander seed powder
1 tbsp oil
½ tsp roasted cumin seed powder
1 ½ cup water
Mix the tamarind pulp with 1 ½ cup of water.
Heat oil in a pan. Add cumin seeds. Fry them for about 30 seconds and add salt, red chilly powder and sesame seeds .
Than add the mixture of water and pulp to this.
Once it comes to a boil, Slower the flame and let it cook till you get the thick consistency.
Than add jaggery or sugar. Mix it well.
Let it boil on low flame and water will reduce. Add cumin seed powder, black pepper and coriander powder.
Check the consistency if its too thick for you add water accordingly.
Take it out of the flame. Let it cool.
The consistency of chutney will go more thicker after it cools down. Store it in a bottle and refrigerate.
Serve it with pakoras, sandwich, Dahi bhalle etc...
