Mango Custard cake
2/3 cup all purpose flour
1/3 cup custard powder(I used mango flavor, you can use any like vanilla, strawberry etc)
½ cup + 2tbsp sugar
¼ cup butter (app.40gm)
1 beaten egg
140gm warm milk
¾ tsp baking powder
½ tsp mango essence
½ tsp baking soda
½ cup almonds chopped
Preheat the oven at 350f.
Beat sugar, butter and egg using a whisk till light and fluffy.
Now add mango essence and warm milk to this. Mix it well till all the ingredients get mix into each other.
Now sieve all the dry ingredients – flour, custard powder, baking powder and baking soda.
Start adding dry ingredients into the wet batter slowly slowly. Do not use whisk at this stage.
Use cut and fold method to mix with spatula.
Add ¼ cup of almond to this and keep rest to sprinkle from top.
Grease the baking dish with oil or butter and pour the batter into it.
Sprinkle the almonds on it and give it a tap so their are no bubbles in it.
Bake it for around 15 to 20 minutes. It took me around 16 minutes.
Check if it is done by inserting a tooth pick in center.
Let it cool on cooling rack for 15 minutes.
The cake comes out to be really very moist and spongy.
