Whole wheat pasta

in cashewnut sauce

Ingredients:

2 cup whole wheat pasta (Penne)

½ cup cashewnuts

¼ cup milk

4-5 dry red chillies

4-5 garlic cloves (chopped)

1 cup broccoli (blanched)

1 capsicum sliced

Small tomato sliced (without seeds)

1 green onion or yellow onion sliced

Salt to taste

½ tsp Oregano

2 tbsp tomato sauce


Method:

Boil pasta as per the instructions on pack.

Dip dry red chillies in water(around ¼ cup) and microwave it for 20 second.

Now Blend milk, cashewnuts, garlic and dipped red chillies along with water to a fine paste.

In a pan, add ½ tsp of butter and stir fry your blanched broccoli.

Take out broccoli in a bowl.

Now add oil in pan, and saute capsicum and onion for 2-3 minutes.

Add tomatoes and saute for a minute.

Now on low flame add cashew nut paste to this. Keep stirring as it might stick to the pan. If it sticks a lot add few tbsp of milk to it. Stir it for another 3 minutes. Add tomato sauce and stir for a minute.

Now add pasta to the sauce. Sprinkle salt and oregano.

Now add broccoli (I added broccoli at the end so that it gives a nice color to pasta and should not mix to much with sauce).Give it a mix.

Yum yum pasta in cashew nut sauce is ready.

It also tastes good when chilled.
