Baked pepper pasta

Ingredients:

2 cups penne pasta

5 bell peppers sliced(green, red, yellow, orange)

1 onion sliced

1 small onion chopped

2-3 tomatoes grinded

3-4 garlic cloves chopped

¼ tsp red chilly powder

¼ tsp soya sauce

1 tsp red chilly sauce

3 tbsp tomato sauce

2 eggs

Salt to taste

2 tsp Red chilly flakes

1 tsp oregano

½ tsp black pepper powder

¼ tsp sugar

Butter/oil

Method:

(We will be making 3 layers of pasta, and salt will be added to all the layers. So be careful while adding salt to each layer)

Firstly boil pasta as per the instructions.

Now in a pan add 1 ½ tsp butter. Add 1 tsp of red chilly flakes, ½ tsp of oregano and salt. Toss the boiled pasta into this and keep it aside.

Now prepare the peppers. In a pan add oil/ butter. Add sliced onion. Stir it for about a minute till onion turns translucent. Now add peppers.

Keep it on high flame and stir fry them for around 2 minutes. Add salt, black pepper, soya sauce, ½ tsp red chilly sauce and 1 tbsp tomato sauce. Mix them nicely and keep it aside.





Now in a different pan add oil. Add chopped garlic and saute it for few seconds and add chopped onions. When onions turn translucent add grinded tomatoes.

Let it cook for around 3 minutes till the water evaporates. Now add pinch of salt, sugar, 2 tbsp tomato sauce, red chilly powder, 1 tsp of chilly flakes and ½ tsp of oregano.

Beat the eggs. Now take baking dish. Grease it. Start with tomato sauce which you prepared. Spread half of it at the bottom. Now arrange half of the pasta on top of sauce as shown in the picture

Now spread half of the peppers. Repeat all the layers again. Now pour the beaten eggs evenly .

Bake for around 30 minutes in pre-heated oven at 350f or till eggs are cooked. You can also add mozzarella cheese on top of it if desire.

Baked pasta is ready.
